Since we fancy ourselves “healthy hedonists” here at Spoonful, our food must give us pleasure, meaning it must taste amazing and make us feel good long after we eat it (energy goes up, not down). Fresh garlic and ginger are not only medicinal foods (for example), but they taste badass! However, despite their greatness, we each noticed we hesitated to indulge in them as much as we would have liked because we felt resistance to peeling and chopping them every time we cooked.
Well, what about store bought? We find that store bought chopped garlic simply doesn’t taste that good, even when it’s all organic and natural like. Then the not so pure brands can use funky preservatives and refined (inflammatory) GMO oils, such as soybean. Prepared ginger products often have sugars that don’t feel as good in our bodies, so we still wanted fresh.
WE WANT FRESH, DAGNABBIT, BUT WE DON’T WANT TO SPEND ALL DAY IN THE KITCHEN! As fortune would have it, there is a glorious solution that I learned ages ago in Spain, which was pre-chopping garlic and preserving it in olive oil. It can last in the fridge for months this way!
However, I didn’t want to peel that much garlic by hand (even though there are great YouTube videos on speedy tricks like shaking it in a covered bowl). When stores started selling organic, pre-peeled garlic, I went Spanish on it and an epic time saving kitchen tip was born!
Then, I took it to another dimension and started doing the same thing with fresh ginger root from local farmers. The skin and flesh are both beneficial so no need to peel!

We don’t peel it. We just throw it in skin and all since both the skin and the interior have medicinal properties. Of course, if there are any dry bits or funky spots, you can cut those off with a knife.
